1. An meal with a low environmental impact
Our food production affects the environment in many different ways. This first version of the PLATE principles focuses on the following environmental aspects: Climate impact from food production caused by greenhouse gas emissions from land, animals, manure storage, energy use, and more. Loss of biodiversity due to deforestation in tropical regions and the loss of traditional agricultural landscapes in Sweden, as well as the use of pesticides. Depletion of natural resources with a focus on unsustainable water use and unsustainable exploitation of oceans and other water bodies.

Principle 4: A meal that is appreciated by many.
For a meal to be sustainable, healthy, and contribute to food preparedness, it is not enough for it to meet theoretical nutritional and environmental criteria. It must also be practical to implement and genuinely appreciated by those who eat it.
En viktig PLATE-princip är således att måltiden uppskattas av många. Att maten är god är naturligtvis centralt för detta men mycket mer bidrar till en uppskattad måltid. Utöver det kulinariska innehållet bidrar även måltidens sammanhang, såsom sällskap, miljö och atmosfär, till upplevelsen. När dessa faktorer är i balans skapas en positiv helhetsupplevelse som inte bara tillfredsställer hunger, utan även främjar välbefinnande och ocial samvaro.
